The journey of producing premium durum flour begins with a commitment to quality and innovation. Every step of our process is designed to ensure the highest standards of consistency, texture, and flavour.
Upon arrival at the mill, a wheat sample is taken to the mill's laboratory. Here, the sample is tested for critical attributes such as protein content, moisture, test weight, ash, and falling number. Despite Canadian Durum Wheat being among the cleanest in the world, it undergoes extensive cleaning to remove impurities picked up during grain handling.
Once cleaned, water is added to the wheat, and it is allowed to temper in bins for eight hours. This process facilitates the separation of the endosperm (containing semolina and flour) from the bran (the outer kernel layer). Tempering ensures the bran becomes tough enough to avoid excessive breakage. Following tempering, the wheat undergoes a debranning process using abrasive and friction techniques, requiring large amounts of air for conveying and drying.
The cleaned and tempered wheat enters the mill for a series of light grinding, sifting, and purifying steps. Corrugated rolls break the wheat into coarse chunks of semolina with minimal flour production. The product is pneumatically lifted to the top of the mill and passed through sifters. These sifters, equipped with multiple sieves, grade the material by size and separate it into streams for purification, further grinding, or storage in flour bins.
The purifier machine stratifies the wheat stock using oscillating sieves and controlled air currents. Heavier endosperm particles are separated from lighter bran materials. Properly sized endosperm particles are sent to produce semolina, while others return to the roller mill for further grinding. This process ensures maximum extraction of high-quality semolina.
The grinding, sifting, and purifying steps are repeated multiple times to extract as much semolina as possible. Streams of semolina from different purifiers are combined to meet customer specifications. The final product passes through rebolt sifters, scales, and may be enriched with vitamins as required. Finally, the semolina is conveyed to storage bins, ready for use in pasta production or other applications.
